I listened to the Saint-Saens "Le Cygne", also the pieces by Mattheson and Wienawski; at first blush, Ms. Rockmore seems to have better pitch control than Jarre does, but again, she is an acclaimed virtuoso of the theremin.
Speaking of early electronic instruments, here's a movement by 20th-century French composer Olivier Messiaen for orchestra and ondes martenot, which often shows up in Messiaen's works, and an instrument upon which his wife, Yvonne Loriod, was an accomplished player:
