I want to know how functions the AKS joystick can control....Pitcbend?Cutoff?

It's assignable. There's an X and an Y axis, which is routable to (almost) any source and (almost) any destination using the pin matrix. Even multiple sources and destinations are possible, although there is a risk of signal loss there.

As an owner of an AKS I can tell you that, the X-Y controller have 2 knobs (right above the X-Y ) where you can control the voltage amount that covers the min/max setting of each axis. If you want it to be chromatic perfect (like semitone/octave) you have to use your ears to 'tune' it. So, it is possible yes! Just don't plug in an extra pin on the X/Y routes or you'll have to retune
